3 Keto Mexican Dips + Chips

Guacamole

Ingredients:

  • 4 avocados
  • ½ lime or lemon, juice
  • 1 tomato, diced
  • ½ red onion, finely chopped
  • 2 tbsp cilantro, chopped
  • ½ jalapeño
  • Salt and pepper to taste

How to make:

  • Cut the avocados in half and remove the pits.
  • Scoop out the flesh with a spoon and place it in a bowl.
  • Using a fork, mash the avocados until there are no chunks.
  • Add lime juice to prevent the avocados from turning brown before moving to the next step.
  • Cut the onion, tomato, cilantro and jalapeño and add to the avocado bowl.
  • Add salt and pepper and mix well until combined.

Pico de gallo

Ingredients:

  • 4 tomatoes
  • ½ red onion
  • 1 jalapeño pepper
  • 1 clove garlic
  • 2 tbsp cilantro
  • ½ lime, lime juice
  • Salt and pepper, to taste

How to make:

  • Cut the tomatoes into halves and remove seeds. Cut the jalapeño and do the same.
  • Dice the onion and finely chop the garlic.
  • Add all the ingredients into a bowl, add salt and pepper and mix.

Queso

Ingredients:

  • 1 cup Monterey Jack cheese
  • ¾ cheddar cheese
  • ½ onion, chopped
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 2 tbsp jalapeño, minced
  • 1 cup heavy whipping cream
  • ¼ tsp xanthan gum
  • ½ tsp salt

How to make:

  • In a pot or skillet to medium-low heat, melt your butter.
  • Add onion and garlic. Sautée until clear; don’t let burn.
  • Pour in the heavy whipping cream and stir.
  • When the cream is thick and bubbling, slowly stir in the cheddar cheese and monterey cheese. One handful at a time.
  • Add xanthan gum and salt. Combine.
  • Add minced jalapeños and serve hot.

Low-Carb Tortilla Chips

Ingredients:

  • 2 cup almond flour
  • ½ cup mozzarella, shredded
  • 1 egg
  • ½ chili powder
  • ¼ paprika
  • ¼ onion powder
  • ¼ garlic powder
  • ¼ salt

How to make:

  • Preheat oven to 350ºF.
  • Line a baking sheet with parchment paper.
  • Melt the mozzarella in a microwave safe container.
  • Mix together the almond flour and spices.
  • Add the egg and mix until a dough forms.
  • Add the melted mozzarella to the dough and knead until smooth.
  • Roll out the dough between two sheets of parchment paper. Roll out thin.
  • Cut into triangles and place them in the baking sheet.
  • Bake for 6 to 12 minutes.
