Cupcakes soothe the soul and ease the mind. Also, it’s not socially acceptable to eat a whole cake by yourself, but there are no rules against eating your weight in cupcakes!

Today, we’re gonna learn how to make some of the best chocolate cupcakes you’ve ever had. It’s really easy, too, so don’t worry if you’ve never tried your hand at baking before. This is an entry-level recipe.

Chocolate Cupcakes


Ingredients

For the cupcakes:

  • 2 cups almond flour
  • 2 tbsp cocoa powder
  • ½ cup erythritol
  • ½ tbsp baking powder
  • 5 tbsp unsalted butter, at room temperature
  • 3 large eggs, at room temperature
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

For the frosting:

  • 4 oz cream cheese softened, cut into cubes
  • 2 tbsp butter softened, cut into cubes
  • 1/2 cup powdered erythritol
  • 1 tbsp heavy cream
  • 1 tsp vanilla extract

How to make:

  1. Preheat the oven to 350ºF. Line a cupcake pan with the cupcake liners of your preference.
  2. Cream together butter and erythritol with a hand mixer on a low setting.
  3. Sift all the ingredients to remove any lumps.
  4. Add the eggs, one at a time, to the creamed butter; mix until smooth, then add vanilla extract.
  5. Add the dry ingredients little by little into the wet ingredients. Mix on high once everything’s added.
  6. Scoop the batter into the cupcake liners. Bake for 20 minutes or until cooked through.
  7. Allow them to cool while you make the frosting.
  8. Using the hand mixer, beat together the cream cheese and butter until fluffy. Add the powdered erythritol and vanilla extract, combine well.
  9. Add in the heavy cream and beat until creamy.

Frost the cupcakes and decorate.


You can enjoy them by themselves or with a tall glass of your favorite milk!
