Pancakes are probably my favorite food. But I'm so picky with pancakes, I've just stopped letting anyone else make my pancakes: Only I know exactly how I like my pancakes.

I've come to share with you some of my most well received pancake recipes, just to make your mornings a little (lot) better.

Keto Almond Flour Pancakes

Almond flour pancakes go great together with fruits of any kind. If you're going with apple, then you should try sprinkling cinnamon on top.

Ingredients:

  • 1 ¼ blanched almond flour
  • ⅓ milk of choice, unsweetened
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 tbsp erythritol
  • 1 tbsp baking powder
  • Pinch of salt
  • Cooking oil of choice

How to make:

  • Whisk the dry ingredients in a mixing bowl.
  • In another bowl, beat the eggs along with milk and the vanilla extract.
  • Preheat a non-stick pan at medium heat.
  • Apply oil to the pan then pour ¼ cup of the batter for each pancake.
  • Cook for about 2 minutes, until the batter starts to bubble, and flip. Cook the other side until the edges are golden.
  • Serve with honey and fruits!

Keto Coconut Flour Pancakes

Coconut flour makes the best pancakes. These have a fluff that is hard to recreate with other types of flour.

Ingredients:

  • ½ cup coconut flour
  • ½ tsp baking powder
  • 3 tbsp sweetener
  • 6 eggs
  • ¾ cup water
  • ¼ butter, melted
  • ½ tsp salt
  • ½ tsp vanilla extract

How to make:

  • Whisk together all the ingredients in a bowl.
  • Let the batter thicken.
  • Heat a skillet over medium-high heat and brush with oil or butter.
  • Scoop a couple of tablespoons of batter into the skillet to make 3-inch diameter pancakes.
  • Cook until both sides are golden.

Keto Chocolate Pancakes

And, of course, an chocolate option. Because what is life for, but to indulge in chocolate?

Ingredients:

  • 1 ½ cup blanched almond flour
  • ½ cup whole milk
  • 3 eggs
  • 1 tsp sweetener
  • ½ cup natural cocoa powder
  • 1 tsp baking soda
  • 2 tbsp vanilla extract
  • 2 tbsp oil of choice
  • ¼ tsp salt

How to make:

  • Add the eggs, sweetener, milk, vanilla, oil and salt to a medium bowl and mix.
  • Whisk in the almond flour, gradually, until smooth.
  • Add the cocoa powder and mix. Now add the baking soda and mix once more.
  • Heat a pan over medium heat.
  • Scoop the pancakes.
  • Cook about 3 minutes on each side.
