Keto Marble Cake (Gluten free)

  • 5 eggs
  • ¾ cup of erythritol
  • ½ cup melted coconut oil
  • 1 tsp vanilla
  • ¼ cup coconut cream or heavy cream (and an extra ¼ cup for the chocolate layer)
  • 2 cups almond flour
  • ¼ coconut flour
  • 1 tbsp of baking powder
  • 2 tbsp unsweetened cocoa powder

How to make:

  • Preheat oven to 350ºF.
  • Cover a loaf pan with parchment paper and set aside.
  • Before you start, all of your ingredients must be at room temperature; you’ll avoid lumps this way.
  • Add the eggs, sugar, vanilla and coconut cream to a mixing bowl and whisk everything together.
  • Melt the coconut oil and wait for it to cool down. Stir in your mix along with the almond flour, coconut flour and baking powder.
  • Using an electric beater, beat your batter until smooth - it should spread easily.
  • Take 1 ½ cup of batter and add it in another mixing bowl. Add unsweetened cocoa powder and the extra ¼ cup of coconut cream. You’ll have now your chocolate batter.
  • Now that you have two different batters, make your beautiful marble cake by pouring alternate portions of vanilla and chocolate batter. Once you’re left with no more batter, swirl a knife into the batter a couple of times for a nice swirling effect.
  • Bake for about an hour. You can insert a knife or skewer to check if your cake is ready - you’ll know if it comes out clean.
  • All you have to do now is allow the marble cake you cool on a cooling rack for a couple of hours or it will crumble if you try to slice it.

Keto Almond Cake

For this recipe, you’ll need for the cake:

  • 3 ½ cups of almond flour
  • ½ tbsp of baking powder
  • ½ cup erythritol
  • ¼ tsp sea salt
  • ⅓ cups of softened butter
  • 4 large eggs
  • ¾ cup sour cream
  • ½ tsp vanilla extract
  • ½ almond extract
  • ½ sliced toasted almonds

  • 3 tbsp of melted butter
  • 2 tbsp erythritol
  • ¼ almond extract
  • ¼ vanilla extract

How to make:

  • Take a pan, be it a springform pan (use this for easy removal) or a cake pan, and line the bottom with parchment paper.
  • Preheat the oven to 350ºF.
  • On a baking sheet, place the sliced almonds and bake until golden. Set aside, and do not turn off the oven just yet.
  • Mix the butter and sweetener in a mixing bowl. Beat in the almond flour, baking powder and sea salt, and add the eggs, sour cream and the extracts.
  • Bake for 30 minutes, making sure the top is golden and the cake well cooked.
  • While our cake rests, prepare the glaze.
  • Once it has cooled for 10 minutes or so, separate the edges of the pan with a knife and place the cake on a cooling rack.
  • Using a brush, brush the glaze on top of the cake and reserve about a tablespoon of glaze for later.
  • Remember the toasted almonds from before? It’s time to use them. Sprinkle almonds over the cake and use that tablespoon of glaze we saved to keep them from falling.
  • Let the cake cool some more before slicing it!
