  • ½ cup erythritol
  • ½ tbsp baking powder
  • 5 tbsp unsalted butter, at room temperature
  • 3 large eggs, at room temperature
  • ½ tsp salt
  • ½ tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

For the frosting:

  • 4 oz cream cheese softened, cut into cubes
  • 2 tbsp butter softened, cut into cubes
  • 1/2 cup powdered erythritol
  • 1 tbsp heavy cream
  • 1 tsp vanilla extract

How to make:

  1. Preheat the oven to 350ºF. Line a cupcake pan with the cupcake liners of your preference.
  2. Cream together butter and erythritol with a hand mixer on a low setting.
  3. Sift all the ingredients to remove any lumps.
  4. Add the eggs, one at a time, to the creamed butter; mix until smooth, then add vanilla and food coloring.
  5. Add the dry ingredients little by little into the wet ingredients. Mix on high once everything’s added.
  6. Scoop the batter into the cupcake liners. Bake for 20 minutes or until cooked through.
  7. Allow them to cool while you make the frosting.
  8. Using the hand mixer, beat together the cream cheese and butter until fluffy. Add the powdered erythritol and vanilla extract, combine well.
  9. Add in the heavy cream and beat until creamy.
  10. Frost the cupcakes and enjoy!

Don't forget to take some pictures before eating them all, though! They may be delicious, but a dessert so pretty also deserves to be immortalized on social media.
