Cheese, as we know, is a gift from the gods, and probably the only redeeming thing about life. The keto diet involves a lot of cheese (particularly cream cheese) in sweet recipes, and that’s because it’s just really good. Today, we’re gonna be making something that’ll spark a love for making desserts: A keto cheesecake.

Making keto cheesecake is not so different from “normal” cheesecake. The main differences are in the crust and the use of keto friendly sweetener instead of sugar - easy-peasy.


For the crust:

  • 1 ½ cup blanched almond flour
  • 3 tbsp erythritol
  • 6 tbsp butter, melted
  • 1 tsp vanilla extract

For the filling:

  • 1 kg cream cheese, softened
  • 3 eggs
  • 2 cups powdered erythritol
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

For the sauce:

  • 1 cup strawberries, sliced
  • ¼ cup monk fruit sweetener
  • 1 tsp lemon juice

How to make:

  1. In a medium saucepan, add strawberries, sweetener, lemon juice and boil.
  2. Reduce the heat and simmer for 10 minutes, stirring occasionally until it thickens.
  3. Remove from heat and set aside.
  4. Preheat oven to 350ºF. Line the bottom of a springform pan with parchment paper.
  5. Combine almond flour, melted butter, erythritol and vanilla extract in a medium bowl.
  6. Press the dough into the springform pan. Freeze for 20 minutes.
  7. Using a hand mixer, beat the cream cheese at medium speed. Add the sweetener a little at a time, then add the eggs one by one and keep mixing until well incorporated. Beat in the lemon juice and vanilla extract.
  8. Pour the cheesecake mixture into the crust. Smooth the top with a spatula.
  9. Bake for 50 minutes. You’ll know when it’s ready if it’s still jiggly but no longer glossy.
  10. Remove the cheesecake from the oven and run a knife around the edge to separate the cheesecake from the springform pan. Let sit for an hour before removing the cheesecake from the pan.
  11. Refrigerate overnight or for at least 8 hours.
  12. Remove the sides of the pan. Pour the strawberry sauce you made and decorate the top with strawberries.
