These mini pizzas are great for those doing the low carb or Keto diet.  Mix and match the ingredients to make a colorful assortment of different flavors and a unique look to snacking.  Serve them at the next party (maybe New Year's Eve?) and watch them be a hit with all the guests!

Ingredients

Crust

·         3 eggs

·         5 tbsp mayonnaise

·         3 tbsp coconut flour

·         1 tsp baking powder

·         ½ tsp salt

·         ½ tsp onion powder

·         1 tbsp olive oil

Toppings

·         8 tbsp tomato paste or green pesto or cream cheese

·         1 tsp sea salt

·         ¼ tsp ground black pepper

·         8 oz. shredded mozzarella cheese

·         2 oz. grated parmesan cheese

·         1 tbsp olive oil

·         12 olives or shrimp or cherry tomatoes or air-dried chorizo

Instructions

1.       Whisk together eggs and mayonnaise in a bowl. Mix dry ingredients separately and fold in the eggs. Mix into a smooth batter. Let sit for a couple of minutes.

2.       Add the batter to a hot frying pan with oil. Should be 8-10 crusts, about 3 inches (8 cm) in diameter.

3.       Fry for a minute on each side until golden. Place the crusts on a baking sheet lined with parchment paper. Preheat the oven to 400°F (200°C) using the oven's broil setting.

4.       Apply a layer of tomato paste, pesto or cream cheese, depending on if you want a red, green or white pizza. Or mix as we have done!

5.       Add topping of your choice. Sprinkle salt, pepper and basil or oregano on top. Add the cheese and sprinkle olive oil on top.

6.       Bake in the oven for 5-10 minutes or until the cheese has melted and the pizzas have turned a nice color. Serve immediately!
