Whenever you want to have a light meal, salad is always one of your best options. But, it can feel like a waste making a lot of effort when you know you're gonna be hungry again in just a couple hours. Not to worry: Here are some of the easiest salads you'll ever make.

Keto Broccoli Salad

Ingredients:

  • 2 broccoli heads
  • ¼ lb bacon
  • 1 cup mayonnaise
  • 3 tbsp apple cider vinegar
  • ¼ red onion, sliced
  • 1 tbsp dijon mustard
  • 1 tsp sesame oil
  • Salt and pepper to taste

How to make:

  • Clean the broccoli, getting rid of any brown spots. Cut the stalks.
  • And the florets to boiling water, cooking until tender. This will take no longer than 2 minutes.
  • Mix the dressing ingredients in a small bowl.
  • Cook and cut the bacon.
  • Combine all the ingredients in a large bowl and toss with dressing before serving.

Keto Caesar Salad

Ingredients:

  • 1lb chicken breast
  • 1 head romaine lettuce
  • 2 cup grape tomatoes
  • 1 cup bacon

Dressing:

  • 1 cup mayonnaise
  • 5 tbsp olive oil
  • 2 tbsp coconut aminos
  • 2 tbsp lemon juice
  • 5 garlic cloves, minced
  • 2 tbsp anchovy paste
  • Salt and pepper to taste

How to make:

  • Whisk the dressing ingredients until smooth. Set aside.
  • Season the chicken breast and place it in a skillet on medium-high heat. Cook through.
  • Fry the bacon and cut into smaller pieces.
  • Chop the lettuce and place it as the base of our salad in a bowl. Add the tomatoes, chicken and crumbled bacon.
  • Drizzle with dressing.


Keto Greek Salad

Ingredients:

  • 4 oz feta cheese
  • 1 cucumber
  • 1 green pepper
  • ½ red onion
  • ½ kalamata olives
  • 4 tomatoes
  • ¼ cup olive oil
  • 1 tsp oregano, dried
  • Salt and pepper to taste

How to make:

  • Wash the tomatoes, green pepper and the cucumber.
  • Cut the cucumber into slices.
  • Deseed and slice the green pepper.
  • Slice the red onion.
  • Dice the feta.
  • Add all the ingredients to a large bowl. Mix well.
  • Serve.
